My husband and I went to a restaurant and had a similar dish. I loved it so much and wanted to recreate this dish! Here is my version of spring rolls in a noddle salad!
This soba noodle recipe with a creamy peanut sauce is a perfect choice! Paired with vibrant veggies, fresh herbs, and hearty grilled portobello mushrooms, this meal is satisfying, nutrient-packed, and perfect for lunch or dinner. Let’s dive in!
Ingredients:
For the Noodles and Toppings:
- 8 oz soba noodles
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup crushed peanuts
- 1 avocado, diced
- 2 large portobello mushrooms, grilled and sliced
For the Peanut Sauce:
- 1/4 cup natural peanut butter
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon maple syrup
- 1 clove garlic, minced
- 1/4 teaspoon grated ginger
- 2–3 tablespoons warm water (to thin the sauce)

Instructions:
Step 1: Cook the Soba Noodles
- Bring a pot of water to a boil and cook the soba noodles according to the package instructions.
- Drain and rinse the noodles under cold water to prevent sticking and cool them down.
Step 2: Prepare the Peanut Sauce
- In a small bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, maple syrup, garlic, and ginger.
- Gradually add warm water until the sauce reaches your desired consistency.
Step 3: Grill the Portobello Mushrooms
- Lightly brush the portobello mushrooms with sesame oil and a pinch of salt.
- Grill for 3–4 minutes per side until tender and slightly charred. Slice thinly.
Step 4: Assemble the Bowl
- Toss the cooked soba noodles with half of the peanut sauce.
- Arrange the shredded cabbage, shredded carrots, grilled mushrooms, diced avocado, and fresh herbs over the noodles.
- Drizzle with the remaining peanut sauce and sprinkle with crushed peanuts for a crunchy finish.
- Optional: I like to sprinkle some chili flakes on top for a little "kick". Feel free to use as much or as little as you'd like!
