Ingredients:

For the Noodles and Toppings:

  • 8 oz soba noodles
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup crushed peanuts
  • 1 avocado, diced
  • 2 large portobello mushrooms, grilled and sliced

For the Peanut Sauce:

  • 1/4 cup natural peanut butter
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon maple syrup
  • 1 clove garlic, minced
  • 1/4 teaspoon grated ginger
  • 2–3 tablespoons warm water (to thin the sauce)
  • chili flakes to taste (optional)

Instructions:

Step 1: Cook the Soba Noodles

  1. Bring a pot of water to a boil and cook the soba noodles according to the package instructions.
  2. Drain and rinse the noodles under cold water to prevent sticking and cool them down.

Step 2: Prepare the Peanut Sauce

  1. In a small bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, maple syrup, garlic, and ginger.
  2. Gradually add warm water until the sauce reaches your desired consistency.

Step 3: Grill the Portobello Mushrooms

  1. Lightly brush the portobello mushrooms with sesame oil and a pinch of salt.
  2. Grill for 3–4 minutes per side until tender and slightly charred. Slice thinly.

Step 4: Assemble the Bowl

  1. Toss the cooked soba noodles with half of the peanut sauce.
  2. Arrange the shredded cabbage, shredded carrots, grilled mushrooms, diced avocado, and fresh herbs over the noodles.
  3. Drizzle with the remaining peanut sauce and sprinkle with crushed peanuts for a crunchy finish.
  4. Optional: I like to sprinkle some chili flakes on top for a little "kick". Feel free to use as much or as little as you'd like!
